When you want a full eggs and sausage breakfast but don't want to dirty a pile of dishes, the breakfast fry up is the way to go. Pile in some cold cooked potatoes with a bit of sausage and fry them up until crisp, then just push everything over and crack in your eggs. A few slices of tomato finish everything off, and before you know it you have a perfect breakfast, lunch, or even dinner! This dish is infinitely customizable-use bacon instead of sausage, or go spicy and use fresh chorizo. Your eggs can be cooked however you like them-it's all about using that one large skillet to cook everything. If you find your skillet is a bit crowded, just move the potatoes or sausage out of the pan to a plate and keep them warm while you crank out the eggs.



One plan clean up and the easiest breakfast ever


2 Italian sausages (about 1/2 lb)  sliced into 1 inch pieces

2 medium Yukon gold (yellow fleshed) potatoes, cooked and cubed

2 tsp unsalted butter

4 large eggs

1 ripe tomato, sliced thickly

1 green onion, sliced or 2 tbsp fresh Italian parsley, chopped finely

salt and pepper to taste

1. Using a large non stick pan, fry up the sausage in a bit of oil over medium heat until browned and cooked through. Remove to a bowl and set aside.

2. Wipe out the skillet with paper towel. Add the butter to the pan and then tumble in the potatoes, stirring and coating them in butter. Continue to cook the potatoes until browned, seasoning with salt and pepper if you like.

3. When the potatoes are browned and crisped to your liking, add the sausage pieces back to the skillet.

4. Turn the heat down to medium low and push the potatoes and sausage to the side of the skillet.

5. Crack in the eggs. At this point you can decide how you want the eggs cooked-scrambled? Sunny side up? Easy over? Add the tomato slices so they get nicely warmed up as well.

6. When the eggs are cooked to your liking, take the pan off the heat and portion everything out on two plates, sprinkling the potatoes with the green onion or chopped parsley. Serve immediately and enjoy!
