A little spice, a little sweet is the perfect combination in these candied nuts. Eat them as a snack, chop them up and toss into salads or over your favourite ice cream, but whatever you do you won't be able to resist them. The level of heat is adjustable-add more cayenne if you like them spicy, or less if you prefer. Try using different kinds of raw, unsalted nuts-pecans, cashews, and almonds all make for great snackers.


Sweet and spicy nuts for snacking!


2/3 cup sugar

1 tbsp salt

1 tbsp chili powder

2 1/2 tsp cinnamon

1/2 - 3/4 tsp cayenne powder

1 egg white

4 cups mixed unsalted raw nuts: cashews, walnuts, pecans, almonds



1. Pre-heat your oven to 300F. Spray a rimmed baking sheet with non stick spray. (This is important! Otherwise the nuts will stick to the pan) Set aside.


2. In a small bowl, measure out the sugar, chili powder, cinnamon, cayenne, and salt. Give it a whisk to mix.

3. Separate the egg. In a large bowl, whisk the white until foamy.

4. Toss the nuts in the egg white until coated, then gradually add the spiced sugar mixture and toss again.

5. Spread the nuts out on a rimmed cookie sheet. Bake for 40-45 minutes, stirring once. Ths sugar will melt and coat the nuts. When you take them out of the oven, let them cool on the pan, stirring a few more times to loosen them up. They will become harder and may be hard to get off the pan if you let them sit too long.
