Roasted Cauliflour, Couscous and Poached Egg Bowl

Roasting vegetables brings out their natural sweetness. Mixed with some chick peas, lemon, and sweet tiny tomatoes this dish makes a satisfying lunch or light dinner. A creamy egg adds richness and some healthy protein. It's a perfect go to lunch for work or if you have vegetables in the fridge that need using up! Be sure to use only fresh, not frozen cauliflower.
 

Roasted veggies topped with creamy egg are a healthy dinner

Ingredients

1/2 head of cauliflower

1 cup halved grape or cherry tomatoes

1 cup chick peas, drained

3 cloves garlic

1 Tbsp olive oil

good pinch of ground pepper AND salt

1/4 tsp smoked or regular paprika

1/2 lemon, cut into wedges

1 cup couscous, cooked

2 green onions, chopped finely

2 poached eggs

Tahini dressing:

2 Tbsp tahini

3 Tbsp water

1 tsp lemon juice

salt and pepper to taste

1/2 tsp honey

 


Directions

1. Turn the oven on to 450 F.

2. Remove all the tough outer leaves from the head of cauliflower, and the tough inner stem. Cut the head in half and set one half aside for another use. Section the cauliflower into florets, and then slice them into fairly thin pieces and put into a medium sized bowl along with the halved tomatoes and chicken peas.

3. In a small bowl, stir together the olive oil, slivers of garlic, salt, pepper, and paprika. Drizzle over the cauliflower mixture and toss so that everything is lightly coated.

4. Place in the oven and roast, stirring only half way through, for about 15 minutes. The cauliflower will lightly brown and the tomatoes will start to soften.

5. While the vegetables are roasting, make the couscous according to package directions, and poach your eggs.

6. To make the tahini sauce, whisk the ingredients together in a small bowl until well combined and set them aside.

7. Once the couscous, eggs, and vegetables are finished cooking you can assemble your bowls. Put about 1/2 cup couscous in the bottom and then top with some of the roasted veggies. Drizzle with tahini. Set an egg on top and sprinkle with chopped green onion.
