Who needs pie for your meringue, when you can top fruit? Roasted pears get dressed up with sweet meringue and chocolate curls in this recipe. Take them over the top by serving in a pool of chocolate sauce, if you wish. As the egg whites aren't completely cooked through in this recipe, it isn't recommended for the very young or anyone with compromised immune systems.

Roasted pears topped with fluffy meringue and chocolate curls

4 pears

2 tsp sugar

chocolate curls

2 egg whites

pinch salt

6 Tbsp sugar

1. Pre-heat the broiler. Cut the pears in half and core with a small melon baller. Place the halved pears cut side up onto a pan and sprinkle each half with 1/4 tsp sugar.

2. Place the pears about 5 inches away from the broiler and cook until lightly browned and bubbling, about 3 minutes.

3. Place the egg whites in the bowl of an electric mixer with a pinch of salt and beat until foamy.

4. With the beater running, gradually add the sugar to the egg whites and continue to beat until the egg whites become thick, glossy, and hold stiff peaks.  Dollop the meringue on top of the pears and place back into the oven until the tips of the meringue is browned, about 30 seconds. Turn off the broiler and let the pears sit in the oven about another minutes.

5. Serve the pears on a plate with chocolate sauce or sprinkled with chocolate curls.
