When you have leftover boiled potatoes sitting in the fridge, this is one of the best things you can do with them. For breakfast, lunch,or even dinner this hash is a tasty way to use them up! Add extra veggies or change up the kind of sausage you use to make it your own. Easily doubled or halved to make more or less servings, this is a forgiving recipe that you can play around with to suit your own tastes.

Ingredients

250 g (1/2 lb) Italian sausage

3 cloves garlic, peeled and sliced into 'chips'

1 lb yellow flesh potatoes

1 stem rosemary, leaves picked off

1 onion

2-4 eggs (depending on how many you would like)

1/4-1/2 cup cheddar cheese

2 Tbsp chopped fresh parsley


Directions

1. In a large non stick frypan, saute the onions and garlic together until softened. Stir in the rosemary and saute a few minutes longer.

2. Crumble in the sausage and with your spatula or a wooden spoon, break the chunks apart into small pieces. Continue to saute until no longer pink. Remove the works to a plate.

3. Add about 1 tbsp butter to the pan and when it's melted, add the potato pieces, tossing to coat them well. Saute them on medium until browned and they have some crispy edges. The trick to this not to stir too much, but rather let them sit over medium low heat and crisp up, stirring them only every now and then. Pre-heat the oven to 425 F.

4. When you think the potatoes are crisped enough, add the sausage and mix, allowing it all to heat and crisp through. Transfer to a greased baking dish when finished. Make a small 'nest' for each egg and crack one in each. Bake the hash for about 10 minutes, until the eggs are set. Watch them carefully, the eggs may look cooked when they are still runny.

5. As soon as the eggs are cooked, sprinkle them with a small amount of cheddar cheese and return the dish to the oven for just a few minutes so it melts. Sprinkle with a bit of chopped fresh parsley.
