Cool and full of chocolate!

1 Tbsp unsalted butter

1/2 cup sugar

2 Tbsp unsweetened dark cocoa powder, sifted to remove lumps

2 Tbsp flour

2 Tbsp cornstarch

1 large egg

1 tsp vanilla

1/4 cup whipping cream

2 3/4 cups whole milk

1. Place a large bowl beside your stove top and put the butter in it. You will need this later.

2. In a medium sized saucepan, whisk together the sugar, sifted cocoa powder, flour and cornstarch. Add the egg and cream, whisking until smooth.

3. Set the saucepan over medium heat and gradually add the milk, whisking constantly, until it's smooth and all of the milk is incorporated.

4. Bring the mixture to a boil over medium heat, whisking occasionally. As soon as it boils, whisk the mixture constantly as you let it cook another two minutes. You may need to turn down the heat a little at this point to keep it from burning. The mixture will thicken up nicely and become this glorious chocolate pudding. Stir in the vanilla.

5. Pour the pudding into the large bowl you had set aside, whisking it well to incorporate the butter and cool it down. Portion the pudding into molds and put them in the freezer for about 6-8 hours.
