Harissa Cheese Waffle Sandwiches

Who says you have to have the usual for a breakfast sandwich? Fill these spicy, cheesy waffles with eggs, proscuitto, tomatoes, lettuce and mayo spiced with a hit of sriacha. Really, you could change it up to suit your own tastes-arugula and ham, bacon with spinach, even a little extra cheese. Either way these will become a part of your breakfast rotation. The waffles can be made ahead and tucked away in the freezer for a weekend when you want something special. If you don't have harissa (you can find the spice blend in specialty food shops), substitute chili powder!

Who says your breakfast sandwich has to be made with bread? Try waffles.



2 cups flour

2 Tbsp sugar

2 tsp baking powder

1 tsp baking soda

1 tsp harissa

1 cup grated old Cheddar cheese

2 green onions, finely chopped

3/4 tsp salt

2 cups buttermilk

85 grams (6 tbsp) unsalted butter

2 large eggs

Oil for the waffle iron

To assemble sandwiches:

125 grams proscuito (you can substitute black forest ham here)

4-6 eggs, cooked either sunny side up, over easy, or poached

2 tomatoes

romaine lettuce

1/3 cup mayonnaise

1/4-1/2 tsp sriacha (to taste)

thinly sliced red onion



1. Turn on the waffle iron and spray it well with oil.

2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cheese, green onion and harissa. Set aside.

3. In a different bowl, whisk together the buttermilk, eggs, and butter. Pour into the dry ingredients and stir well. The batter will be thick with some lumps, but that's okay.

4. Using a 1/3 cup measure, spoon the batter into the waffle iron. Spread the batter out to the edges of the individual waffle molds and then close the waffle iron. Cook the waffles until the are golden brown and cooked through, about 3 minutes.

5. Remove the waffles to a wire cooling rack and let cool to room temperature.

To assemble the sandwiches:

1. In a small bowl, stir together the mayonnaise and sriacha. Set aside.

2. Place two waffles in front of you. On one side, place some slices of proscuitto and then top with an egg.

3. Spread the srachia mayonnaise lightly on the other waffle and top with lettuce, some tomato slices, and a bit of red onion. Sprinkle the works with salt and pepper, if desired.

4. Sandwich it all together and eat!
