If you're needing something a little different for the lunch box, why not try this ham and egg bun? While we're at it, you don't even need to use ham-swap it for chicken or any other favourite lunch meat, swap up the cheese for pepper jack or mozzarella, and you can customize this sandwich however your heart desires. Hard boiled egg keeps you from contending with runny-ish yolks, and when made the night before, it's a great breakfast on the run for a busy morning.

1 Ciabatta bun or English muffin

honey mustard

1 tsp finely minced green onion

Cheddar cheese

Deli ham

1 large egg



1. Hard boil the egg. Remove from the boiling water and plunge into cool water. When cool enough to handle, peel the egg and slice it with an egg slicer. Set aside.

2. Toast the bun until golden.

3. Spread each side of the bun with honey mustard sauce. Layer with ham, then egg, a sprinkle of green onion, and cheese.

4. Sandwich together and enjoy!
