If company shows up at your door and you need a quick appetizer, these ham and egg bites are a quick and easy addition to the table. You probably have everything in the fridge, even. They are really easy to make-just make sure to use the best quality bread, ham and mustard you can find to knock these out of the park. If you like a spicy kick you can try using hot mustard or even swap out mustard altogether and try a little spicy pepper jelly.

Ham and egg bites can make a great appetizer too!

Ingredients

5-6 slices of thick white bread

50 g sliced deli ham

honey mustard

2 hard boiled eggs

a few sprigs of fresh thyme

salt and pepper


Directions

1. Toast the bread and butter lightly. Cut the bread into circles with a 1 1/2 inch biscuit cutter. Fold the ham slices in half and slice into ribbons.

2. Spread honey mustard on the toast circles. Fold the ham ribbons and place them, one by one, on the toast circles.

3. Top the ham with a slice of hard boiled egg. Sprinkle with pepper and then some fresh thyme leaves. Serve!

 

Variation: Try omitting the honey mustard and spreading spicy pepper jelly on the toast disks instead.
