Sweet and fluffy, these pancakes are the best way to use up leftover eggnog you may have hanging around in the fridge. Double the recipe and whip up a batch for Boxing Day and a houseful of guests! They'd be great with breakfast sausage, maple syrup, and fruit. With only two bowls and a whisk, your kids could even make these. The eggnog flavour comes through so nicely that they are rich and delicious, without being overpowering on the nutmeg. You will love them!

1 cup flour

1 1/2 tsp baking powder

1/4 tsp salt

1/8 tsp freshly ground nutmeg

1 cup full fat egg nog

1 Tbsp oil

1 egg



1. In a large bowl, whisk together the flour, baking powder, salt, and nutmeg. Set aside.

2. In a different bowl, whisk together the egg nog, oil and egg until well blended. Pour over the dry ingredients and whisk together until blended. Don't worry about some lumps, you don't want the batter to be completely smooth.

3. Lightly oil either a non stick skillet or a griddle set to medium heat. When the pan is good and hot, ladle the batter into pancakes. When they have formed bubbles and the edges look dry, flip them over and cook the other side.

4. Serve immediately with maple syrup!
