Freezer waffles make this a quick breakfast to make-I guess you could use homemade, but the thinness is a bonus, here. Butter mixed with a touch of honey and the heat of sriracha add a bit of kick to this sandwich. You could even do the eggs in the microwave if you wanted to save more time, or add bacon if you are feeling a bit adventurous. Either way, it's a fun change on the usual breakfast fare.

Sweet honey and the heat of sriracha kick this breakfast sandwich up a level.


2 frozen waffles

1 egg, cooked however you like (I made it sunny side up)

2 Tbsp unsalted butter, softened to room temperature

1 tsp honey

1/4 tsp sriracha

bit of minced chives or green onion


1. In a small bowl, stir together the butter, honey, and sriracha with a fork until well blended.

2. Cook your egg. While it's cooking, toast the waffles!

3. When the waffles are finished, butter each with a little bit of the flavoured butter.

4. Sandwich the egg between the two waffles. You can top the egg with a little chives or green onion if you like.
