Egg and Cheddar Crepe Packets

Crepes lend themselves to so many things-rolled with savory fillings, drizzled with chocolate, but here we roll them up burrito style and stuff them with eggs, cheese and bacon. Kids will love these hand held bites that you can customize to their liking. Swap out the bacon for ham, change the Cheddar to pepper's all about whatever you can dream up. Tuck these in a lunch box or put them in the kids' hands on their way out the door. Either way, it's a good way to fill tummies!

Breakfast you can hold in your hand.


8 large eggs

3 Tbsp milk

3 slices of bacon, cooked and crumbled

1/2 cup shredded Cheddar cheese

six 8 inch crepes


1. In a medium sized bowl, whisk the eggs and milk together until well combined.

2. Lightly coat a non stick pan with oil spray. Over medium low heat, cook the eggs, stirring gently, until they are fluffy and cooked through. Remove from the pan.

3. Let the pan cool, and then wash it. Set aside.

4. Lay the crepes out on the counter. Divide the egg mixture, chopped bacon, and cheese among them.

5. To roll up the crepes, first fold the left side towards the middle, then the right.

6. Take the edge closest to you and fold it up and over the ingredients in the middle, tucking them in as you go. Tuck in the sides and continue rolling the crepe away from you. Place it seam side down on the counter. When all the crepes are rolled, get your pan on the heat and give it a spray with oil.

7. Place the rolled crepes in the pan over medium low heat to warm and crisp up a bit. Watch them carefully, turning when they have browned.

8. Serve them with a side salad, or once they have cooled, hand them off to kids to eat up!
