Egg and Avocado Tostadas

Change up your morning with this healthy and satisfying breakfast! Avocados are a great source of nutrients and good fats, and these tostadas are so quick to make, you could make a bunch for the family to enjoy. Add veggies, beans, or a spicy sausage if you want-this recipe is just a basic idea, you can make it your own!

Spicy salsa, creamy avocado and egg!


1 small tortilla, whole wheat or corn

1 egg

2 heaped tbsp of your favourite salsa

.5 oz of feta cheese

1 green onion, minced finely

1/4 of an avocado, sliced


1. Turn the oven on to 350 F. When the oven is hot place the tortilla on the rack in the middlle of the oven for about 3-4 minutes, watching carefully and turning so it doesn't burn. The tortillla willl puff up and crisp a little.

2. Place the tortilla on a plate and spoon the salsa over top, spreading to cover. Sprinkle with feta cheese.

3. Top with the fried egg, a sprinkle of chopped green onion, and then the sliced of avocado. Serve immediately!
