Easy Breakfast Sandwiches

Are you in love with a certain fast food breakfast sandwich? Why not make your own? Besides less grease, and far cheaper to make at home, you can change up the fillings to whatever you like. Try jalapeno cheddar and bacon, or swap your ham for peppered turkey and brie, and more. The possibilities are endless! Pair them up with a fruit salad and some roasted sweet potato bites, and you have yourself a really great breakfast, lunch, or even dinner.

So easy to make at home exactly how you want.


4 English Muffins, split

4 eggs

slices of cheese (you can use Cheddar, Swiss, or whatever suits you)

slices of ham, cooked bacon, or in the picture I used peppercorn turkey lunch meat


1. Poach your eggs. Now, if you've never poached eggs, don't worry about it. It's not really that hard. Check out this great video over at Eggs.ca about how to poach an egg like a pro. If you still find it too much work, you can always just fry up the eggs and slip them into the sandwiches.

2. In the meantime, split and butter the English muffins. Turn your oven onto broil and toast them until they are nicely browned.

3. Top 1/2 of the English muffins with a slice of cheese, and the other half with some ham, bacon, or turkey. Put back under the broiler until the cheese melts and is bubbling. Remove from oven and plate them-one piece with cheese, one with ham, and then top the ham side with the egg.

4. Here's a trick I've learned-if the yolk of your egg is soft, you'll bite into it and yolk will squirt everywhere. Before sandwiching the whole thing together, I often get a fork and mush up the yolk a bit so that the liquidy yolk just runs inside the sandwich and makes it all delicious.
