Why have ordinary French toast when you can have it filled with spicy, rich speculoos cookie butter? Warm ginger, nutmeg, and cinnamon flavours take your French toast to new levels-and you can make it even better with a dusting of icing sugar or a drizzle of sweet maple syrup. The cookie butter becomes melty when warm, leaving you wanting to lick the plate.

Rich and spiced, these are a perfect special occasion breakfast


1 cup half and half

3 large eggs

2 tbsp honey, warmed briefly in microwave

1/2 tsp cinnamon

1/4 tsp salt

pinch nutmeg

8-10 thick slices of slightly stale bread

2 Tbsp butter for the pan

1. In a pie plate, whisk together the eggs, half and half, honey, salt, nutmeg, and cinnamon. Set aside.

2. Thickly spread the cookie butter on one of the thick slices of bread and sandwich with another piece of bread. Do this until you have about five or six sandwiches.

3. Over medium low to medium heat, melt some unsalted butter in a non stick pan.

4. Dip the sandwiches into the cream and egg mixture, letting them sit for a few minutes per side to soak up the egg and cream mixture. Hold them over the pie plate for a minute, letting the excess liquid drip back into the pie plate.

5. Cook the French toast sandwiches, a few minutes each side until they are browned. Remove from the pan to a cooling rack in the oven, and let bake for a further 1-2 minutes.

6. Serve cut in half and dusted with icing sugar.
