These cookies are fantastic-a little chewy, a little crunchy, and full of chocolate and toffee. If you are looking for something fun to add to your cookie jar, they will surely fit the bill. Don't let the idea of meringue scare you off, it's actually quite easy to make and the results are fabulous! Make sure to line your cookie sheets with the parchment paper, otherwise you could have a very big mess on your hands.

4 egg whites

1 cup sugar

3 Tbsp flour

1 tsp vanilla extract

4 chocolate covered toffee bars (such as Skor bars)



1. Line a baking sheet with parchment paper and pre-heat the oven to 350 F.

2. In a double boiler or metal bowl over simmering water, whisk together the egg whites and sugar until well blended. Continue to whisk constantly while the water simmers away, for about 10 minutes. The mixture will become foamy and opaque.

3. Transfer the egg white mixture to a bowl and with an electric mixer, beat for about 6 minutes until it becomes thick, glossy, and stiff peaks form.

4. Sprinkle the flour over the meringue, then fold in the flour and vanilla, stirring very gently so you don't deflate the meringue.

5. Fold in the chopped chocolate toffee bits.

6. Drop the mixture by spoonfuls onto the prepared baking sheet. I like to use a cookie scoop to keep things less messy. You should end up with about 20 cookies.

7. Bake for about 20-25 minutes, until they are lightly browned and seem dry. The toffee will seem to seep out of them onto the pan but this is ok and entirely normal.

8. Remove the pan from the oven and let cool for about 15 minutes. Don't touch the melted toffee as it will be very hot and burn you!

9. Store meringues in a sealed container on the counter.
