Chocolate cupcakes by themselves are the stuff dreams are made of, especially these chocolate ganache cupcakes which are the most requested thing I make. Valentine's Day calls for something special though, so I have been known to top them with chocolate mousse as well. These decadent treats will be a fun dessert for the family and feel very special. You don't even need to bake the cupcakes yourself, just pick up your favourite plain cakes to top yourself.

Get creative and mix and match flavours, serve with fresh fruit or ice cream, and you'll have a Valentine's Day dessert to remember.

Top cupcakes with bittersweet mousse for a decadent dessert!


one dozen plain cupcakes with no icing - chocolate or vanilla, homemade or store bought

a batch of bittersweet chocolate mousse

1/2 cup whipping cream, sweetened and whipped to soft peaks for garnish

2 oz bittersweet chocolate

3 tbsp whipping cream

1 tsp butter



1. Cut pieces of foil into 4 inch thick strips. Wrap them around the cupcakes and secure with tape.

2. Make the chocolate mousse. Spoon the mousse into the cups, smoothing the tops. Arrange the cakes on a board and lightly cover. Chill for at least 1 hour.

3. When you want to serve them, take the cakes out of the fridge and peel off the foil. Remove the paper cups from the cupcakes.

4. Heat the whipping cream and butter in a small sauce pan until steaming and the butter is melted. Pour over the chopped chocolate and stir until smooth. Let the whole works cool and then spoon a bit over each cake. Put them back into the fridge to set for a about 15 minutes.

5. Garnish with sweetened whipping cream and chocolate curls to serve.
