Chocolate Bread Pudding

Turn your leftover bread into a rich, delicious dessert full of chocolate flavour! Whether you choose to serve this after dinner or even for a decadent breakfast, your family will love you for it. Top with softly whipped cream and fruit to take it over the top. Don't forget to take the crusts off the bread-I forgot, and they went quite crunchy.

Rich and full of chocolate!


3 tbsp unsalted butter, softened plus another 1 Tbsp for greasing the pan

1/2 cup whipping cream

1/2 cup whole milk

2 Tbsp sugar

1 tsp vanilla

1/2 cup semi sweet chocolate chips

2 large eggs, beaten

6 slices of bread, crusts removed


1. Measure the chocolate chips into a medium sized bowl and set aside.

2. Grease a 9x5 loaf pan with about 1 tbsp butter. Cut the pieces of bread into triangles and fit them into the loaf pan

3.In a medium saucepan, stir together 1/4 cup of the whipping cream, all the milk, sugar and vanilla and 3 tbsp butter. Heat over medium until mixture in simmering. Take the pan off the heat and pour over the chocolate chips. Stir them gently until the chocolate has melted and it's well combined. Set aside and let cool for about 5 minutes.

4. Whisk the eggs into the chocolate mixture and then pour the mixture evenly over the bread, pushing the pieces down into the chocolate custard to soak them through.

5. Cover the dish with cling wrap and put in the fridge for 2 hours.

6. Take the dish out of the fridge 30 min before you plan to bake it to let the dish come to room temperature, then turn on the oven to 375 F.

7. Bake in the pre-heated oven for 30 minutes. Let cool a bit before serving with dollops of whipping cream or if you are feeling really decadent, ice cream!
