Cheesy Egg Toast

Toast piled high with creamy boiled eggs is fantastic on its own, but add slowly caramelized onions and cheese to take it over the top! Whip these up to enjoy for breakfast or a light snack.. but you could make mini versions for wonderful party appetizers. The trick to making great caramelized onions is to cook them on low heat, slowly, until they are perfect.

Slathered with cheese and onions, what more could you ask for?


4 slices of good quality thick bread

4 hard boiled eggs, peeled and sliced

1 Tbsp chopped fresh thyme leaves

pinch chili flakes

2 Tbsp butter

1 large onion, sliced thinly

1/2 tsp sugar

3/4 cup shredded cheese



1. Butter both sides of the bread and fry them in pan over medium high heat, turning, until golden. Remove from the heat and place on a baking sheet.

2. Melt about 1 Tbsp butter in the pan and add the sliced onions. Turn the heat down to medium low or low, stirring the onions and cooking them gently until they soften and start to turn brown. Sprinkle with the sugar and continue to cook over low to medium heat until dark brown and cooked through. Set aside and let cool to room temperature.

3. In a small bowl, stir together the cheese, thyme, and cooled onions. Add the chili flakes if using. 

4. Divide the eggs among the bread slices and then top with the cheese and onion mixture.

5. Broil the sandwiches until the cheese is melted and bubbly. Remove from the oven and serve immediately.
