Cheddar Sausage Breakfast Muffins

Full of bits of sausage, these cheesy muffins will be a welcome addition to your breakfast rotation. Whip up a batch and keep them in the freezer to re-heat on days when you're running late-they are a great breakfast, paired up with a heart boiled egg and some fruit. Change them up by using spicy chorizo sausage or substitute swiss for cheddar to keep things interesting. Either way, they are a tasty bite to start your morning!

200 g Italian sausage (about 2 or 3)

2 cloves garlic, minced

pinch hot pepper flakes

1 tsp fennel seeds, crushed

2 1/3 cups flour

1 1/2 tsp baking powder

1/2 tsp ground pepper

4 green onions, finely chopped

2 eggs

150 ml olive oil

275 ml milk

135 ml buttermilk

200 g strong cheddar, grated




1. Pre-heat the oven to 350 F. Line your muffin tin with paper cups.

2. Crumble the sausage meat into a skillet with the garlic, fennel, hot pepper flakes and saute until browned. Set aside until cooled.

3. In a large bowl, whisk together the flour, baking powder, and green onion. Set aside.

4. Whisk together the oil, buttermilk, milk, and eggs together. Set aside.

5. Stir the cooled sausage and cheddar cheese into the flour mixture. Make a well in the middle and add the milk mixture, stirring until the mixture is just combined.

6. Spoon the batter into the muffin tins. Top with a little more Cheddar and a sprinkle of green onions. 

7. Bake the muffins for 20 minutes. Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
