Crispy little bites stuffed with eggs and bacon make a great snack.

4 slices of bacon, cooked and diced

3 eggs

1 Tbsp milk

1 Tbsp butter

pinch of pepper

3-4 Tbsp grated sharp Cheddar cheese

1 green onion, finely chopped

25 fresh wonton wrappers

1. In a medium bowl, beat the eggs with the milk and a good pinch of pepper. Set aside.

2. Heat a non stick frypan over medium low heat, and add the butter. Swirl around to coat and when the butter is liquefied, add the eggs. Scramble the eggs, stirring them gently, until curds form and they are cooked through. Remove to a plate.

3. Wash and dry the fry pan, then set aside.

4. Stir together the eggs, bacon, cheese, and chopped green onion in a small bowl. Get your work surface ready with a small dish with about 1/4 cup of water in it, and some moist paper towel.

5. Place about 1 heaping teaspoon of the egg and bacon mixture in the middle of a wonton wrapper.

6. Moisten your fingers and run them along the edge of the wrapper. Fold the wrapper in half to form a triangle. Press the edges together to seal, moistening more if you need to. Place the wonton on a plate and cover with a damp paper towel. Continue until you've used up all the filling.

7. Heat up the non-stick fry pan over medium heat with about 1 Tbsp of oil in it. When the pan is good and hot, add the wontons. You may have to cook them in batches so that you don't crowd the pan, You want them to sizzle as the hit the pan, so if that isn't happening heat it up a bit more. Cook the wontons about 2 min, or until they are lightly browned. Flip them over and brown the other side.

8. Add 2 Tbsp of water to the pan and put a lid on. Let them steam for about 2 minutes. Transfer the finished wontons to a plate. Serve with ketchup, hot sauce, or even salsa!
