When the weather is hot, sometimes you just want something light that isn't going to heat up the kitchen. These salad bites are the perfect answer-make the bacon and eggs ahead of time and tuck them in the fridge, all ready to be turned into a delicious snack later on in the day.

A quick, low carb snack for the summer


1 head of butter lettuce (also known as bib lettuce)

4 large eggs, hard boiled

4 slices of bacon

12 cherry tomatoes, halved (quartered if they are large)

1 green onion, sliced thinly

1/4 cup your favourite Ranch dressing


1. Gently remove the leaves from the bottom of the head of lettuce, being careful not to tear them. Wash and spin dry. You need about 2 of them per person. Arrange two leaves per person on a serving platter family style, or on individual plates.

2. Divide the tomatoes, then eggs and crumbled bacon between the lettuce leaves. Sprinkle with the finely chopped green onion.

3. Just before serving, drizzle lightly with dressing. You could also serve with the dressing on the side and let people dress the salad cups themselves if they wish.
