We'll let you decide if chocolate waffles are for dessert or breakfast-either way, these are delicious! Not too sweet, they would make a great breakfast paired with yogurt and fruit, but we loved them best topped with chocolate sauce and ice cream. This homemade chocolate sauce from David Lebovitz is a quick, tasty version to make at home. Whip up a batch of these waffles for a fun Valentine's day breakfast and use the leftovers for dessert! You wouldn't want them to go to waste, right?

2 cups flour

1/2 cup cocoa powder

1/4 cup packed brown sugar

2 tsp baking powder

1 tsp baking soda

1 tsp salt

3 large eggs, separated

2 cups buttermilk

1/2 cup vegetable or mild olive oil

1 tsp vanilla

6 oz dark chocolate, chopped finely

Your favourite ice cream

jar of chocolate sauce (or you can make a homemade version like this one)

can of cherry pie filling


1. Turn on your waffle iron and spray lightly with non stick spray.

2. In a large bowl, sift together the flour, cocoa, baking powder, baking soda, and salt. Add the brown sugar and stir the works with a whisk until it's well mixed. Make a well in the center and set aside.

3. Whip up the egg whites with a mixer on high until they reach soft peaks. Set aside.

4. In a medium bowl, whisk together the buttermilk, egg yolks, vanilla, and oil. Pour into the well in the dry ingredients. Stir gently until the mixture is just moistened.

5. Gently fold in half of the egg whites, leaving some streaks, and then fold in the rest, along with the chopped chocolate.

6. Spoon the mixture into your waffle maker, using about 1/3 cup batter per waffle. I got about 8 waffles out of the recipe. Bake the waffles for about 2 minutes, or until cooked through. Be careful when removing them from the waffle maker, the bits of chocolate will be melted and very hot!

7. Let the waffles cool to room temperature. Cut each in half, or leave whole for a bigger serving. Spoon a few tablespoons of chocolate sauce in the middle of a plate, and set the waffle half on top. Place a scoop of ice cream on the waffle slice. Spoon cherry pie filling over top, and finish with another spoonful or two of chocolate sauce. Serve immediately.
