If I could eat this for breakfast every morning, I would. Smoked salmon, or lox, is amazing when sandwiched between creamy Boursin cheese and an gently poached BC egg. The other plus is this is easy to make, you can get the kids to help make it for Mom's breakfast on Mother's Day!

Top your lox with an egg


2 mini bagels

4 large eggs

85 g smoked salmon (lox)

1 wheel Boursin cheese, either plain or chive & shallot flavour, garlic and herb flavour

capers (optional)

1 finely minced green onion


1. Lightly butter the bagel halves and toast them under your broiler.

2. Slather with the Boursin cheese.

3. Gently lay pieces of smoked salmon on top. Add capers, if you wish.

4. Poach an egg to your liking, and when it's finished drain it on paper towel. Slide it on top of the lox and sprinkle with a bit of green onion.

5. Eat!
