Bacon Wrapped Asparagus Spears and Boiled Eggs

On the weekend, it's always nice to have a leisurely breakfast-boiled eggs, a bit of toast, and maybe something special to dip into them.  Runny egg yolks are always a treat-creamy and rich, they are also loaded with all kinds of nutrients to see you through your day. Asparagus is a great vegetable to have with eggs, and what better way to make it more special than to wrap it in bacon? I also really love adding the cinnamon bread in the photos; the sweetness combined with the creamy egg and salty bacon made a fantastic breakfast. These eggs and asparagus would make a great brunch for Easter or a special breakfast for almost any day and the bonus is, it's really easy to make! Also, it has been my experience that reluctant vegetable eaters will consume almost anything wrapped in bacon.

Asparagus is even better wrapped in bacon and dipped in runny egg yolks.

Ingredients

16 medium-thick spears of asparagus

8 slices of bacon

4 eggs


Directions

1. Turn on the oven to 375 F
 
2. Cut the bacon slices in half lengthwise and cross wise so you have four pieces. This can be a little difficult if the bacon is warm, or if it’s sliced thinly. To help, lay the bacon out flat on a foil lined tray and put it in the freezer for 10 minutes or so to firm it up.
 
3. Snap the woody ends off the asparagus. This isn’t difficult, they should naturally snap in the right spot when you bend them.  Wrap a piece of bacon around each spear, from end to end stretching it out a bit. If the bacon is wrapped too tightly it won’t cook as well, so a long spiral is better.

4. Spray a roasting pan with a bit of non stick oil spray. Arrange the asparagus on the baking pan and sprinkle with pepper.

5. Bake the asparagus spears for about 20 minutes, until cooked through. Remove from the pan and dab them on paper towel.  While the asparagus is baking, soft boil the eggs.
 
6. Serve the eggs with buttered toast and the bacon asparagus spears to dip in the runny yolks. The real trick is to keep yourself from eating the asparagus spears off the pan while the eggs are cooking, but I'm sure you can accomplish that!
