Bacon Cheddar Breakfast Bake

Ease is the name of the game this time of year, when things are in overdrive. This savory bake has all the best breakfast things-eggs, bacon, and lots of melty cheese. You can double or triple the ingredients to serve a crowd, tuck it away in the fridge the night before, and amid the hustle and bustle of all things Christmas morning pop it in the oven for the easiest breakfast ever. Change things up and use your favourite breakfast sausage (cooked and crumbled) in place of bacon, or change up the cheeses to your favourites.

Serve this dish for brunch with a tossed green salad, or keep it for breakfast and add some fruit and breakfast potatoes. You'll never believe just how easy this is to throw together!

Bake right away or tuck away overnight for an easy breakfast!


1 cup cheese (you can mix smoked gouda and cheddar here if you like, or use all of one kind)

2 eggs

4 thick slices of hearty bread

3 slices of bacon, cooked and crumbled

1 cup whole milk

fresh cracked pepper

1 green onion, finely chopped

1 tbsp fresh parsley, finely chopped



1. Butter a small casserole dish and turn the oven to 350 F.

2. Cut the crusts off the bread and cube the bread into 1 inch pieces.

In a small bowl, whisk together the milk and eggs. Set aside.

Place half of the bread cubes in the bottom of the dish. Top with half of the bacon, cheese, green onion and parsley. Repeat with bread crumbs, then the remaining bacon, cheese, parsley and green onion.

Pour the egg and milk mixture evenly over top of the bread. You can, at this point, either bake the dish right away or cover with cling film and tuck it in the fridge overnight. If you are baking it after it has been chilling in the fridge, let dish sit on the counter for about 20 minutes before putting it in a hot oven.

Bake for about 30-35 minutes until browned and set in the middle. Cool slightly before serving.
