Father's Day is just around the corner, and when I asked my husband what a 'manly' dessert would be, the first thing that he suggested was pie. Well, I like pie as much as the next person, but I wanted something a little easier to put together that the kids could help with. Later I was at the market and spotted some gorgeous fresh apricots, which are just making their way into the stores now, and immediately thought of cobbler. Crisps and cobblers are some of my favourite desserts because they are just so easy to make. No pastry to fiddle with, just a bit of a topping over some delicious fruit.

Ripe, sweet fruit doesn't need a lot of sugar if you ask me, but you can fiddle with this one more if you like things sweeter. This is a perfect dessert to get kids to help with. They can cut the fruit, mix it up, and even help with the biscuit topping. I daresay that you probably could even eat it for breakfast if you want, but it's especially divine topped with a big scoop of vanilla ice cream.

Fresh fruit bakes up deliciously in the oven with a flaky biscuit topping. Cobblers are simple to make and yet a sweet way to take advantage of seasonal fruit. Top with your favourite ice cream for a more decadent treat!

Ingredients

12 fresh, ripe apricots (about 1 1/2 lbs)

3 tbsp sugar (more to taste if you like)

1 1/2 tsp lemon juice

1 1/2 tbsp flour

1/2 tsp almond extract (or, try 1 tsp Grand Marnier)

Topping:

3/4 cup flour

2 Tbsp cold butter, cut into cubes

1 Tbsp sugar

3/4 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1/3 cup buttermilk

1 large egg
 


Directions

1. Pre-heat oven to 350 F.

2. Pit the apricots, slice each in half and then each half into about 5 slices. Toss the sliced apricots with lemon juice, then sugar, flour, and almond extract in a large bowl, then set aside for about 30 minutes to become juicy while you prepare the topping.

3. In a medium sized bowl, make the topping; whisk together the flour, sugar, baking powder, baking soda, and salt. With 2 knives or a pastry cutter, cut in the butter until the mixture resembles coarse crumbs. Set aside. In a small bowl, whisk together the egg and buttermilk. Add to the flour mixture and stir gently with a fork until just combined. Set aside.

4. Pour the apricots into a 9x9 inch glass or ceramic baking dish, spreading until the apricots cover the bottom evenly. Pinch off bits of the dough and place them on top of the apricots here and there. You won't cover the whole thing, but try to spread it out so that when the dough rises and spreads, it will mostly cover the top. When you have finished dropping the bits of dough all over top of the fruit, sprinkle the dough with 1 tsp of sugar.

5. Bake the cobbler  in the center of the oven for about 25-30 minutes until golden and bubbly. When it's finished cooking, remove from the oven and allow to sit on the stovetop for about 10 minutes until cooled. You can eat the cobbler by itself, which is really tasty-or serve with scoops of ice cream. The cobbler is best eaten the same day it's made.
