Cream and Chive Baked Eggs

Baked in pretty dishes with only four ingredients, these eggs are something special. Serve them up if you want to treat someone to breakfast in bed, or on a weekend when you want to put your feet up and enjoy another cup of coffee. Why not? It's Spring Break in BC, you should treat yourself!  With some bacon and fruit, they'll be sure to get you going and are so easy that kids can help by cracking the eggs and drizzling cream, leaving you to watch them while they bubble to perfection in the oven.

Whip up these 4 ingredient eggs on a weekend.


4 eggs

3 Tbsp whipping cream

1 Tbsp chives

optional: 2 Tbsp freshly grated Parmesan cheese

salt and cracked black pepper to taste


1. Pre-heat the oven to 425 F. Butter two six inch baker dishes until well coated. Break two eggs into each dish. Sprinkle with chives, salt, and pepper.

2. Drizzle whipping cream over the eggs in each dish, starting over the yolks and working your way out. Sprinkle with Parmesan cheese.

3. Place the baking dishes on a baking sheet and place them in the middle of the oven on the center rack. Let bake for 5-7 minutes until mostly firm but still slightly runny in the center.

4. Remove the dish from the oven and set a plate or pot lid over top. Allow them to sit on the stovetop for about 2 minutes to firm up the middle a little more before eating. The heat from the dish and the lid over top will finish cooking the middle and you'll still have slightly runny yolks.

5. Let the dish cool a bit before serving and then dig in!
