Holiday Spinach and Swiss Cheese Strata

Strata is one of those things that just makes your life easier. Made with good French bread, cheese, salty bacon and a bit of spinach, all you have to do is prep it the night before and leave it in the fridge for the next morning. On holiday mornings when you have company and kids to wrangle, a dish like this really gives you time and energy to get a good breakfast on the table without subjecting yourself to a tonne of work or dishes. Eggs and milk soak up into the bread and create a wonderful savoury bread pudding, ready to be eaten with salads, breakfast potatoes, and fruit.

I think this may just become one of your favourite ways to eat eggs in the morning. You can swap out the bacon for diced ham, cooked and crumbled sausage, and the cheese for Cheddar or monterey jack if you wish-either way, you'll love the ease of this dish!

Easy to make ahead and stash in the fridge, this feeds a crowd.

Ingredients

1 onion, chopped

3 cloves garlic, minced

1 bunch spinach, washed and coarsely chopped

1 loaf slightly stale french bread, cubed

10 slices of bacon, cooked and chopped

1 cup Swiss cheese, grated

1 cup freshly grated Parmesan cheese (the kind from your deli, not in a can)

8 large eggs

2 1/2 cups milk

2 tbsp grainy mustard

coarsely ground pepper

pinch of nutmeg


Directions

    1. Lightly grease a 9x13 inch glass baking dish with butter. Set aside.

    2. In a large skillet over medium low heat, saute the onion in some olive oil until softened. Add the garlic and continue to saute until fragrant, then add in the spinach and toss until it has wilted. Set the pan off the heat.

    3. Scatter half of the cubes of bread in your prepared dish. Top with half of the spinach mixture, half of the bacon, and half of both of the cheeses. Repeat the layers again; bread, spinach mixture, bacon, cheese. Whisk the milk, eggs, mustard, nutmeg and pepper together in a bowl and pour evenly over the bread mixture. It will seem like a lot of liquid, but don't worry. The bread will soak it up and it will be perfect when you bake it.

    4. Cover the dish with cling film and place in the fridge overnight. In the morning, pre-heat the oven to 375 F and take the strata out for about 20 minutes. Let it stand on the counter to warm up slightly before you place it in the oven. Bake the strata for about 50-60 minutes, until browned and set. Cool for about 5 minutes on the stovetop before slicing into squares.
