If you are looking for a dessert that is easy to make, requires only a few ingredients, and is deeply rich and satisfying, this chocolate mousse is for you. Mousse is a wonderfully light dessert perfect for Valentine's Day. It's light and  fluffy, requiring only a dollop of whipping cream and maybe a few fresh berries to give it a little elegance. If you want to be fancy, pick up some ready made chocolate cups at the grocery store to spoon the chocolate mixture into, or try spooning the mixture into fancy wine glasses to make it more special looking. Served with a few elegant looking cookies and an after dinner coffee, your Valentine will think that you went through a lot of trouble.

If you are concerned about the use of raw egg whites in this recipe, you can use pasterized egg whites as a substitute. If you choose to use regular eggs, the very young and the elderly or those with compromised immune systems shouldn't consume raw or undercooked eggs.

Smooth, dark and rich topped with whipping cream and chocolate curls

Ingredients

6 oz of the best quality bittersweet or semi-sweet chocolate you can find (no more than 72% cocoa), chopped

1 cup whipping cream

3 egg whites

pinch of salt

2 Tbsp sugar


Directions

1. Melt chocolate in a double boiler over hot, not boiling, water until smooth. Set aside.

2. In a bowl with an electric mixer, beat the whipped cream until stiff peaks form. Set aside. In a separate bowl and with clean beaters (any trace of fat from the whipping cream will affect the egg whites whipping up nicely),  beat the egg whites and salt until soft peaks form. Add the sugar, and continue beating until stiff peaks form. Set aside.

3. Stir 1/4 of the whipped cream into the cooled chocolate. Fold the chocolate mixture into the egg whites until combined, and then fold in the remaining whipped cream. Spoon into small serving dishes.

4. Cover the individual mousses with plastic cling film and chill in the fridge up to 6 hours. Serve with whipping cream, fruit, and chocolate curls.
