When you are cooking breakfast for a crowd, this is the way to go. Why slave over a stove making eggs when you can just pop everything in the oven and forget about them for a little while? These egg cups are the perfect way to go. Easily customized, you can add bits of ham, bacon, or cooked sausage to them, sprinkle some cheese on top, or leave them as is. Use whole wheat bread to be healthy, or for a twist change it up to a cheese loaf or something with herbs and garlic. There are as many combinations as you can dream up!

Put toast and eggs together in a pan for the perfect way to feed a crowd!


4 slices of your favourite bread

4 large eggs


salt and pepper

optional: cooked and crumbled bacon, cooked and crumbled sausage


1. Pre-heat oven to 375 F.

2. Slather four cups on a muffin tin with butter.

3. Cut the crusts off the bread and then flatten the slices of bread with a rolling pin.

4. Fit the slice of bread into a muffin cup. Bake in the oven for 10 minutes, until crusty.

5. At this point, if you want to add some cooked bacon or sausage, sprinkle some into each toasted egg cup. Crack an egg over top into each bread cup, then put the pan back into the oven for about 20 minutes or until the eggs are cooked through.

6. Use a butter knife to gently loosen the egg cups from the pan and place them on a plate. Serve with salad for a light brunch or dinner, or you can serve them with fruit and hashbrowns for breakfast.
