You could say that school lunches are kind of my speciality. For 20 years as a school support staffer, I have supervised kids as they eat, and packed my own child's lunch for a better part of 13 years as well.

In the fall I start out energized, ready to pack the best lunch ever but after a week or two, I'm bored already. By June, lunch fatigue has sets in and many parents are ready to just throw in the mini plastic containers and be done with it, already. I don't blame them! I get tired of packing my own lunches and sometimes resort to tossing a container of hummus and crackers in my bag.

Sometimes egg salad elicits groans with kids. Images of soggy, smelling sandwiches make them seem unappealing, especially in warm weather-but what about little bite sized rolls, just perfect for little fingers that can be keep cool easily just because of their size? Why not call them sushi, just to give them a bit of mystery-after all, they are fish and seaweed free for the squeamish.

What I love best about these little rolls is that they are bite sized. Small kids don't have a lot of time to eat, and many resort to visiting with friends rather than chewing. Given a large sandwich or something with a spoon, they usually only get in a few bites before the bell goes and lunch is left behind. Bite sized, easily handled little rolls are the perfect solution and will guarantee that they will actually eat more, and that bit of protein from the egg, along with the healthy fats in avocado and whole wheat bread makes a lunch that will get them through the afternoon! In this recipe, yogurt adds moisture instead of fatty mayonnaise, and with only a touch of fresh dill you won't have kids complaining that there are "green things" in their sushi.

This fun take on sushi combines creamy eggs with healthy avocado for a fun and tasty snack that kids will love.


1 large hard boiled egg, chopped

1/4 avocado, sliced into small chunks

1 heaped tsp plain yogurt

1/2 tsp mayonnaise

1/4 tsp fresh minced dill

salt and pepper to taste

3 pieces of white or whole wheat bread


1. Cut the crusts off the bread. Then roll the bread flat, or rather  squish it with a rolling pin. Kids love to do this!

2. Next, mix together, the egg, avocado, yogurt, mayonnaise, dill, salt and pepper in a small bowl. Be gentle-you don't want to mash up your egg completely.

3. Spread some of the egg mixture on the long end of your bread that is closest to you, and roll it up.

4. You can slice the sushi roll right away, but covering it in cling film and putting in the fridge for 15 minutes works, too. Then with a sharp knife, cut each roll into 4 pieces, like sushi. Stand on end so you can see the middles.

5. Serve with raw veggies for a great snack or lunch for little people. You can also pack it in a small lunch container, but try not to eat them all yourself!
