Arugula, Egg, and Salami Salad

Sometimes it's just too hot to cook and you need ideas for a light dinner that hits all the right notes, but doesn't have you standing over a stove in a sweltering kitchen. Salads are a great summer dinner, and by adding protein such as chicken, fish, meat, beans or eggs, you can turn them into a satisfying meal. Eggs are a great choice because you can quickly boil a few in the morning when the kitchen is still cool, and then stash them in the fridge for later. A cold hard boiled egg also makes a great mid-morning snack as well if you need a pick-me-up.

This salad is a perfect answer for lunch or dinner, by itself or paired with a soup or possibly some buns and a variety of fillings. This recipe isn't really a recipe, but rather a guide. You can increase or decrease ingredients as you wish, but I found that this makes a wonderful one serving salad. If you wish to make more than one serving, set out the plates and build each salad on each plate as you go, adding more or less of each ingredient.

Boiled eggs turn a salad from ho-hum into a meal. Peppery arugula, spicy sausage and cheese combine to make a salad so good you'll want to lick the bowl.


a large handful of arugula

scant 1/4 cup sliced dry salami

1 Tbsp grated Parmesan cheese or finely chopped mozzarella cheese

1/4 fresh avocado, cut into chunks

1/4 cup halved cherry tomatoes

1 hard boiled egg, cooled, peeled and quartered


1 Tbsp balsamic vinegar

2-3 Tbsp olive oil

pinch of salt and pepper

1/4 tsp Dijon mustard


1. Coarsely chop the arugula to make the pieces more bite sized and place in a shallow bowl. Top with the cheese, salami, avocado and tomatoes. Tuck the quartered egg around in the bowl.

2. Measure the dressing ingredients into a Mason jar. Screw on a lid and then give the whole thing a good shake until it comes together. Drizzle some over the salad. Add some fresh cracked pepper over the salad and enjoy!
