Loaded Bacon and Egg Naan

Spice up your morning with a little fresh salsa spooned over gently poached eggs, crispy bacon, and tender naan! You can spice up the salsa if you wish by adding a little chopped fresh jalapeno, or leave it out to just enjoy the fresh tomatoes and avocado.

Fresh salsa, bacon, and egg in one bite.


2 mini naan breads (Presidents Choices makes them, or cut a larger naan bread in half)

4 pieces of bacon, cooked

4 poached eggs

1/2 avocado, cut into small chunks

1/2 cup quartered grape or cherry tomatoes

1/2 cup diced sweet pepper

1 Tbsp finely chopped fresh jalapeno, seeded (optional)

1 Tbsp chopped fresh cilantro

1 green onion, chopped

1 tsp olive oil

1 tsp freshly squeezed lime juice

1 tsp fresh lime zest

salt and pepper to taste



1. In a medium sized bowl, toss together the tomatoes, peppers, green onion, avocado and cilantro. Drizzle with the olive oil and lime juice. Toss until coated. Sprinkle with salt, pepper, and the lime zest. Toss again. Taste and adjust for seasonings. Set aside.

2. Poach the eggs to your liking and drain them on paper towel. Gently warm the naan breads either in the oven for a few minutes or in the microwave very briefly.

3. Lay the naan on a plate and top each with 2 slices of bacon. Slip on a poached egg, then spoon the fresh tomato salsa over top. Repeat with the other naan bread.

4. Serve immediately.
