Eggs with Pan Roasted Brussels Sprouts, Caramelized Onions and Bacon

Brussels sprouts with bacon and caramlised onions are good enough on their own, but topped with a perfectly poached egg they are heavenly! The creamy yolk coats the sprouts, and the salty bacon adds a bit of kick. This makes a really great lunch.

1 lb of Brussels sprouts, trimmed and cut in half

1 large onion, sliced thinly

1/4 tsp sugar

2 tbsp butter, divided

1/4 cup water

2 thick slices bacon, cooked and crumbled

2-4 eggs, depending on servings

Salt and pepper


1. In a large fry pan over medium low heat, melt 1 Tbsp of butter. Add the onions and fry over low heat, stirring occasionally, until they are cooked through and begin to turn light brown. Sprinkle the sugar over top, stir, and continue to fry over low heat until browned and caramelized.

2. Remove the onions from the pan to a plate. Add the other tablespoon of butter and once it is also melted, add the Brussels sprouts and toss well. Pan fry them over medium heat, stirring and tossing while they get a little color. Add the water and while it steams and bubbles, put a lid on the pan and let the works steam and simmer to cook the Brussels sprouts through. It should take about 2 minutes and they will be tender crisp and bright green when ready.

3. While the Brussels sprouts are cooking, bring a small pot of water to a simmer and poach the eggs. When they are ready, drain on paper towels and set aside.

4. Once the water has evaporated completely, add the onions and crumbled bacon to the pan. Give it all a good stir and then mound onto plates and top with eggs.
