Puff Pastry Bacon and Egg Quiche

This time of year is busy and you don't have time to make pastry. Or if you are like me, pastry just isn't your thing but don't fear! Puff pastry in the freezer case at the grocery store will come to the rescue. Simply thaw and roll it out, and you're good to go! Keep it simple with just cheese, bacon, and green onion in this one-sometimes the most simple things really are the tastiest. This also makes great leftovers.

The easiest kind of pie crust and a simple filling make a delicious quiche.


1/2 of a package of puff pastry, thawed

3 eggs

1 cup whole milk

2 cups shredded cheese

3 thick slices of bacon

pinch of nutmeg

salt and pepper

2 green onions, chopped finely


1. Pre-heat the oven to 450 F.

2. Roll the puff pastry out so that it will fit into an 8 inch pie plate. Pinch the edges so that it fits.

3. In a medium sized bowl, whisk together the milk and eggs. Add the nutmeg along with a bit of salt and pepper.

4. Sprinkle the cheese, bacon, and green onion into the crust. Pour the egg and milk mixture over top.

5. Bake the quiche for about 15 minutes, and then turn the heat down to 350 F and bake for another 15-20 minutes or until the quiche is set in the center and the crust is browned. Let cool for about 5 minutes before slicing.
