Cheese Blintzes with Mango Sauce

Blintzes combine two of my favourite things-a cheesecake like filling, and crepes. Topped with a fresh seasonal fruit sauce, they are probably one of the best breakfasts you could ever have. Many recipes pair them up with a berry sauce, but why not go tropical and use some mangoes instead? Crepes are quite easy to make and you can even do them the day before to save yourself a little time in the morning. You can find how to make crepes with our recipe here.

10 crepes

1 1/2 cups ricotta cheese

4 oz cream cheese, softened

3 Tbsp icing (powdered) sugar

1 egg

1 lemon, zested

1 Tbsp butter

Mango sauce:

3 mangoes

1 lime, zested and juiced

1/4 cup water, orange juice, or mango necter

2 Tbsp sugar or more to taste


1. Pre-heat the oven to 400 F.

2. In the bowl of an electric mixer, beat together the ricotta, cream cheese, egg, powdered sugar, and lemon zest until smooth.

3. Lay a crepe out on the counter in front of you. Measure 1/4 cup of filling on the bottom 1/3 of the crepe.

4. Fold the bottom away from you, over the filling.

5. Fold the sides of the crepe in towards the middle, like you would if you were rolling up a burrito

6. Fold the entire thing over and roll up gently. You need to be careful, as the filling is somewhat wet and you don't want it to fall apart. Place the rolled blintz gently on a plate and continue with the rest of the crepes.

7. Melt about 1/2 tbsp of butter in a non stick pan and over medium heat, gently fry the blintzes until they are browned and crisp. You'll need to do this in batches, and add a little  more butter as you go. Place the finished blintzes onto a baking sheet.

8. Once all the blintzes are fried, place the pan in the oven for about 10 minutes to cook the egg in the filling.

9. Serve immediately with the mango sauce spooned over top.

Mango sauce:

1. Measure two cubed mangoes, the sugar, lime juice, and about 2 tbsp water into your blender and puree. Add a little more juice/water if it's too thick.

2. Transfer the puree to the stove top and bring to a bubble so it's warm to spoon over the blintzes. Stir in the other cubed mango. At this point if you wish to add a little rum or Grand Marnier it might be a nice touch. Add the zest at the very end before serving.
