Blueberry Coffee Cake

Berry season is coming, and what better way to celebrate it than make this amazing coffee cake? As an addition to a brunch table or with a scoop of ice cream for dessert, it's a perfect accompaniment to your morning coffee.

Blueberries and crumble make a tasty breakfast


1/3 cup butter, softened

2/3 cup packed brown sugar

2 eggs

1 tsp lemon zest and lemon juice

1 1/2 cups flour

1 tsp baking powder

1/4 tsp salt

1/2 cup plain yogurt

2 cups fresh blueberries


1/2 cup flour

1/2 cup brown sugar

1/4 tsp cinnamon

 1/4 cup melted butter




1. Butter a 9x9 inch square baking pan and then line it with parchment paper. Pre-heat the oven to 350 F.

2. Beat together the butter, brown sugar, eggs, lemon juice, and lemon rind until well mixed. In a different bowl, whisk together the flour, baking powder, baking soda and salt.

3. Add the flour mixture to the butter in 2 parts, alternating with the yogurt and beating until smooth. Scrape the batter into the pan and spread so that it covers the bottom evenly.

4. To make the topping, mix the flour, brown sugar, cinnamon, and butter together in a bowl until it's well mixed together. Crumble it into pieces with your fingers.

5. Sprinkle bluberries evenly over the cake batter, and then crumble the topping over top.

6. Bake the cake for 50 minutes until a tester inserted into the center comes out clean. Cool on the counter before slicing into pieces and serving.
