You'd swear this cake is magic! While it bakes a fluffy, light, almost meringue-like sponge forms the top, but dig your spoon in for a surprise. Underneath the sponge is a light, lemony curd ready to spoon over the cake once you scoop it out. The cake is drier and more cake-like the first day you make it, but as it sits in the fridge it becomes more moist, almost with the texture of cheesecake. On a hot day baked up and then cooled in the fridge for a few hours, this cake is simply glorious topped with fresh raspberries and whipping cream. If you love lemon, this is definitely the dessert for you!

This recipe is adapted from Canadian Living's cookbook "Sweet and Simple" which was released this year. If you are looking for a book that has lots of easy recipes I highly recommend it for homemade pudding, custards,and great egg dessert recipes like this one!

Ingredients

3 eggs, separated

3/4 cup sugar

1/3 cup flour

pinch salt

1 1/4 cup buttermilk

2 tbsp butter, melted

1 Tbsp grated lemon juice

1/3 cup freshly squeezed lemon juice


Directions

1. Pre-heat your oven to 350 F and grease an 8x8 inch (2 liter) baking dish with butter.

2. In a large bowl, whisk together the egg yolks and sugar until thick and pale yellow. Stir in the flour and salt, and then whisk in the buttermilk, butter, lemon juice, and zest. The mixture will look soupy.

3. Whip the egg whites until soft peaks form. Fold 1/3 of them into the batter, then fold in the rest of the egg whites. The mixture will  appear soupy, but it's okay-keep folding until they are blended in.

4. Pour the batter into your prepared pan. Fit the pan into a 9x13 inch metal cake pan or a roasting pan big enough to hold it, and then fill the pan with hot water so that it comes 1/2 way up the sides of the baking dish. Bake for 30-35 minutes. The cake will turn golden and appear dry and set.

5. Remove the cake from the water bath, and place it on a wire rack to cool completely.
